Sausage casserole!
Made my family's sausage casserole recipe in cast iron for the first time ever. I've been baking it in a 2 qt Pyrex for so long that it never even occurred to me to change. Tasted just as delicious, maybe even 1% more so.

I say "my family's" recipe even though I know they didn't come up with it, but I've never seen it anywhere else. I think last time I asked Mom over email where it came from she never responded. Maybe there's scandal and intrigue attached.

Anyway it involves a tube of breakfast sausage, a can of tomatoes, a can of biscuits, and so on. I've thought many times over the years (once I became a bit more of a foodie) that I should make it one time with, like, artisan sausage and fresh tomatoes and from-scratch biscuits ... and then every time I end up reminding myself, "That's not the POINT of this recipe. The point is to make the comfort food you remember from childhood" and I put away those ideas and go buy a tube of sausage and a can of tomatoes and pop open some biscuits. The End.

Just remembered that this is MLTSHP and someone's likely to ask for the recipe so let me pre-empt that

1 lb sausage - I need to confirm that we're talking Southern breakfast sausage here, like Jimmy Dean or Wampler's or Tennessee Pride - not Italian sausage or some other kind.
1/2 cup white onion, diced
1 clove garlic, finely chopped or minced

16 oz can diced tomatoes (not drained)
1 tsp. oregano
1/2 tsp. basil
salt & pepper to taste

2 tbs. flour
1 can biscuits
1-2 cups shredded mozzarella cheese

DIRECTIONS:
1.) Preheat oven to 350 deg.
2.) Brown the sausage. While cooking make sure and break the sausage down into the smallest chunks possible. You want the finished product to look like ground beef, not like sausage patties. Drain grease, and return to skillet.
3.) Sauté onion and garlic in skillet with sausage for several minutes, until softened.
4.) Add tomatoes along with the juice from the can. Add spices and heat until bubbling. Salt and pepper to taste. Sprinkle flour over mixture and stir until thickened.
5.) Reduce heat to simmer while you cut the biscuits into quarters.
6.) Pour sausage into casserole, arrange biscuits on top and sprinkle with cheese.
7.) Bake 12 to 16 minutes or until biscuits are puffed and cheese is slightly brown.

BTW in these parts, canned tomatoes often are of a much higher quality/flavour than the fresh tomatoes you find. I will also eat fish from a can much rather than some old thing from a fish shop that has been frozen and defrosted several times over. Here’s to cans!

@Allanpoe American breakfast sausage is ground pork, usually spiced with sage, pepper, and other spices. If you google a recipe online, you may be able to get close.

@Allanpoe minced meat, ground beef, any kind of chunky meat you like, I would imagine. Throw some sage in there (as @calipers said) to get the flavor more in line with what one would expect from breakfast sausage.

@trey I dunno, it comes and goes. Depends on the day.

HEY EVERYONE you can throw a small can of mushrooms in there as well if you want to be a mushroom-eating person.

I make sheppard's pie with biscuits on top instead of mashed potatoes and this seems like an improvement. Will try it out soon. THX

@jfaster when we make shepherd's pie we do it with ground beef, mashed potatoes, and green peas (as per usual) but we put a bunch of curry powder into the beef. I don't know where we picked up "curried shepherd's pie" but it's been a staple ever since.

but now I want it with biscuits too.
