I've been making scrambled egg since I was a kid, and I'm even snooty enough to demand they are made in a ban marie.
Today I made my first ever omelette. Honey roast ham, parmesan, tons of pepper and green tabasco.
My mother used to make very good omelettes when I was a kid, and then I recall my Auntie Anne made one for me using very earthy mushrooms. The whole thing went grey and looked like a brain, so maybe that put me off.
The only criticism of this was perhaps the middle was a little undercooked.
