i also made a batch of sourdough biscuits
another home-alone comfort food. a nice way to use up sourdough discard after prepping bread dough.

the recipe is basically stolen from king arthur flour (see: https://www.kingarthurbaking.com/recipes... ), though i whisked a couple of teaspoons of thyme and sage in with the dry ingredients for a little extra holiday pizzazz.

hot tip learned from alton brown: placing the biscuits close together makes a huge difference in both structural integrity and softness of the insides

@octaneTom i use this recipe regularly and it never disappoints. this batch was a bit softer than my usuals since i added a bit of liquid to even the dough out, but they were still really tasty.

@poorusher my mum’s father always got biscuits and gravy at the local diner when i was growing up. it’s worth it if you ever get the chance to try it.

as an adult, i make the vegetarian equivalent frequently - pan-fry tofu chunks with smoked paprika and thyme, then whip up a roux-style gravy with flour and milk. sometimes i do mushrooms for extra “chew”. it’s easy to make and i like it a ton.
