Every Lao Gan Ma, explained.

Companion video for https://mltshp.com/p/1M5SU , in which I wax rhapsodic about a Chinese condiment that's been watered down for white Americans.

I've hyped them before, but Chinese Cooking Demystified might be my favorite food video bloggers right now. They do their research, and by "research" I don't mean a thorough googling plus maybe a trip to the library; they're based in (iirc) Guangzhou and hit the streets to get their facts straight with the locals. They're also very good at demonstrating and explaining their subjects.

Incidentally, TJ's is also selling a repackaged version of the chili chips snack that's mentioned in passing around 2:30 in the video. Those are also very good -- we keep a bag of them on the coffee table and they're a healthier snack than potato or corn chips because a couple small slivers of pepper are usually sufficient.

I've got a jar of Fly by Jing's chili crisp and goddamn is it good. Like if there is a better version of it, shutup and take my money.

They also make a slightly more vinegary sauce called Zhong sauce which is also mighty good.

This was a great watch. Thanks! We buy one at Ranch 99 (in San Diego) and my folks and sibs call it "crushed glass" and fight over it. But it's nice to have the primer!

If I buy the original LGM, what are some of its uses? I'm running out of my fav Malaysian version which has anchovies or dried shrimp (I have both) and getting refills looks dim given current travel conditions etc.

@infini For us it's an all-purpose condiment. It doesn't go on anything but it goes on many things. Tonight we used it on fried rice. The other day I had some on a steam bun. The crispy chili is basically a lot of fried onion and pepper and garlic covered by enough chili oil to give it shelf life. Haven't tried the other varieties yet but probably will get around to some of them eventually.
